I use this particular knife every work day. I work for a national chain of bakery/cafe restaurants, and was given one 2 months ago for my job. I've used the knife countless times already, but it's still as sharp as it was when I was issued it. It opens and closes easily and with little chance of injury when closing it properly. Actual use of the knife is great for scoring breads and the like. It cuts through the dough with ease and decreases the chances of using too much force. It's one of my favorite pieces of equipment to use, and is easy to keep clean.
